Jessica Hoffman, Pinnacle Health's Registered Dietician, prepared these dishes in a cooking/nutrition class as part of Pinnacle's new weight loss program that teaches people how to cook and eat better. The dishes are, clockwise from top right: steamed frozen vegetables; brown rice with portobello mushrooms; chicken thighs with pear, leak sauce and roasted walnuts and barley corn and spinach risotto.
